Ingredients
2tlb Oil
1tsb Mustard Seed
2 large ripe cooking Tomatoes – chopped or 2 plum tinned Tomatoes will suffice
1 small Onion – thinly sliced
2 large Potatoes – 1 inch cubes (approx)
½ tsb crushed Chilli
1 tsb Ginger
½ Crushed Garlic
1 tsb salt
½ tsp ground red Chilli powder
½ Turmeric
1 heaped tsp Jeera & Coriander crushed
1tsp Chopped fresh Coriander (optional)
Method
Heat oil in medium sized pan
Carefully add Mustard seeds into a pan of hot oil as they start popping turn down the heat
Add chopped Tomatoes stir and simmer with lid until Tomatoes have melted.
Add fresh Chilli Ginger, Garlic, Salt and Turmeric, Stir and simmer for 5 mins.
Stir in Potatoes and Onions, simmer on low heat until potatoes are tender (add water if necessary do not let dish dry out – should be a thick sauce)
Add Crushed Jeera and Coriander, stir
Add fresh Coriander and Serve
This authentic dish is best served with Chapatti or Puris & Basmati Rice.
